This type of eating leads to obesity, which greatly increases the risk for type 2 diabetes. Every time someone eats a meal their blood sugar levels rise and insulin is secreted from the beta cells of the pancreas. This insulin acts as a key to open the glucose (sugar) gates to allow body cells to take up glucose for use as fuel. One reason why obese people are more at risk for type 2 diabetes is because of their diet. Their beta cells are on a crazy insulin secreting schedule due to America's lust for foods. Their beta cells get stressed too much and they might secrete too little, too much, or stop secreting insulin altogether. This is a major problem when our cells can't get a hold of the glucose they need from our diet for fuel. Many life-threatening health problems can result. Type 2 diabetes was unheard of in children until recently. It is time for America's diet to change to reduce their risk for type 2 diabetes, heart disease, and stroke.
